House-Made Haggis

Seward Co-op's haggis is great because it's handmade with local beef organ meat; which means there are more vitamins and minerals than other cuts of meat. Haggis has a really smooth texture and rich flavor. And since it's already cooked, there's really no preparation except re-heating it. It's great when taken out of its casing and fried up with eggs. Sauted Parsnips with Kale

Chef: Toni Tunge

Ingredients 1 cup sliced onion
2 cups - 1/2 moon cut parsnips
1 Tbsp sesame oil
2 Tbsp minced ginger or 1/2 tsp ground ginger
1 quart kale in bite sized pieces

Saute onion and parsnips in oil for about 5 minutes. Add 1/2 cup water and ginger. Cover and simmer 5 minutes. Add kale, cover and simmer 5 more minutes.
