Native Harvest Wild Rice

This wild rice is a great product because it is an indigenous crop that is harvested in the traditional way. White Earth uses the income from the sale of the rice to buy back parcels of land for their tribe that were sold off by individuals. Polenta with Adzuki Beans and Salsa

This is great as a one dish meal, a side dish or an appetizer. Serve warm or room Temp.

Ingredients:
Your favorite salsa
1 ½ Cup Adzuki beans
1 ½ Cup Polenta
4 ½ cup Vegetable broth or chicken broth
Dash of Salt
Tablespoon of olive oil

For the Beans:
Wash beans and drain. Cover with cold water, discard floaters and soak 4 to 8 hours in a cool place. Drain; add 3 cups of water for every cup of beans. Cover, bring to boil, simmer until soft, approximately 1 hour.

For the Polenta:
Combine water and salt in a saucepot, over high heat bring to boil and slowly stir in polenta. Heat and stir for 20-30 minutes, until mixture pulls away from the sides of the pot. Pour onto a lightly moistened sheet pan.

Slice off a serving size of polenta, fry in a sauce pan coated with olive oil. Heat the beans with the salsa and spoon over plated polenta.
