Summit Porter Marinated Pork Spare Ribs with Daddy Sam’s BBQ Sawce

2- 2 ½ pounds country style pork ribs

For the marinade:
12 oz. Summit Porter
8 oz. strongly brewed coffee
2 Tbsp. chopped garlic
¼ c. chopped shallots
1 Tbsp. sea salt
12 whole peppercorns
1 tsp. cayenne

1 jar Daddy Sam’s BBQ Sawce

Spread the ribs out in a non-metal casserole. Combine all marinade ingredients and pour over ribs, turning them to coat all sides. Marinate covered and refrigerated for 24 hours turning meat in marinade periodically.

Before baking, pour off marinade and discard it.  Bake ribs in a 250 degree oven for 2 to 3 hours, or until tender. During the last 15 minutes, slop on Daddy Sam’s BBQ Sawce.

Allow the ribs to rest after removing them from the oven. Serve warm or at room temperature with grilled veggies and more sawce!
